A Guilt-Free & Body Loving Christmas

Repeat after me, I love my body.

It's taken me a long time to say those words and actually mean them, to look in the mirror and be happy with what I see and to feel comfortable in my own skin. I'm a big believer in self love and guilt-free living and really wanted to share that with you all as I know Christmas or Winter in general is a time of year many people feel especially self conscious, experience food guilt or generally feel quite low about themselves, but that shouldn't be the case. Christmas is the most magical time of the year and should be filled me love, laugher, food, family, friends and enjoyment, not feelings of self-loathing or pressure.

Loving your body is so important, but trust me when I say I know how difficult it is. I love my body and all it's capable of now but rewind a couple of years ago and this was far from the case; I couldn't look in the mirror without crying, I'd cover my body from the neck down, I felt ashamed of the way I looked, I felt was too self conscious to leave the house and I longed to be somebody else. All of these thoughts and feelings were completely toxic, life destroying and looking back, irrational.
It's taken me a long time to learn to love the body I have and it's definitely been a struggle, but I've accepted I'll never have slim thighs, I'll always have a few stretch marks, my boobs won't ever be big,  I'll never be naturally super bronzed and some dresses just look horrendous on me. But you know what? That's okay because nobody is perfect! Don't get me wrong, I still have days where I feel a self conscious or I can't find an outfit that looks good but generally I'm happy with the skin I'm in and I don't let my insecurities become a big deal because life is too precious!

Spiced Cranberry Cookies

I love baking all year round but there's something special about baking at Christmas time. The delicious spices, getting the whole family involvement, the joy everyone finds in festive food and sharing my creations with loved ones. I've been spending a lot of time in the kitchen this month, coming up with some indulgent, delicious and nutritious treats that are just perfect for these cold Winter days.

Today I'm sharing the recipe for these spiced cranberry cookies which are just heavenly! They're soft and buttery on the inside with a perfect crunch to the outside, they contain fruity cranberries and spices such as cinnamon & nutmeg that bring out will no doubt bring out that festive feeling in even the biggest of grinches!

My cranberry cookies are gluten free, vegan and refined sugar free but you wouldn't believe that for a second if you didn't know! They taste almost buttery with the perfect amount of sweetness and pair perfectly with a steaming cup of tea. As they're allergen free they'd be the perfect cookies to bake if you're having people over o if you know someone with allergies or food intolerances - they're suitable for all! Hey, you could even make them with the kids and leave them out for Father Christmas!

Christmas Gift Guide

It can be tricky thinking of presents for loved ones at Christmas time and unless they've given you some ideas or dropped a few hints it can be easy to feel stick at what to get them.

Crispy Thyme Roasted Potatoes & Brussels Sprouts With Cranberry Sauce

Can you believe it's December tomorrow? This year is just flying by! As scary as it is that it's the last month of the 2016 tomorrow I'm so excited because that means it's nearly Christmas!

Christmas is my favourite time of the year, I love everything about it...especially the food. So, of course I'm treating you to a few festive recipes over the next few weeks, starting with my Christmas porridge a couple of days ago and moving onto a recipe for the most delicious crispy roast potatoes and brussels sprouts with cranberry sauce.


Everyone loves roast potatoes, don't they? But brussels sprouts seem to be a much unloved veggie. I've always loved them though and believe it's the way you cook them that determines how nice they are; boil them then you're just asking for bland disappointed but roast them with herbs and spices and you're onto a winner! I roasted the potatoes and sprouts with lemon, garlic, thyme and pepper which creates this mouthwatering flavour that can't be beaten. Paired with the zesty cranberry sauce you just can't go wrong!

Christmas Porridge With Cranberry Compote

December is creeping up on us and it'll be Christmas before we know it! I love all things Christmas, including all the delicious food that comes with it. This bowl of Christmas porridge with a zesty cranberry compote is the perfect breakfast to get you in the Christmas spirit!

I love all the wintery spices like cinnamon, nutmeg and ginger and can't get enough of zesty oranges so this porridge which combines all of these is a total winner! The oats are so warming with a hint of sweetness from the honey and the cranberry compote topping with the delicious orange zest is so fruity and mouthwateringly yummy, add the chopped nuts and you've basically got Christmas in a bowl!

Peanut Butter Energy Balls

Everyone loves peanut butter, right? If you're a nut butter addict like me you're going to love these peanut butter energy balls! You'll be obsessed with them from the first bite and may have to hide the batch before you devour 6 all in one sitting (just a warning!)

These sweet treats are so easy to make, so mouth-wateringly tasty and only made with the most natural, good-for-you ingredients. 

I've made lots of energy ball recipes before but these may be my favourite. The taste and texture is so spot on and they taste like such a treat even though they're full of goodness like healthy fats, energy boosting carbohydrates and protein too. I love to eat these with a cup of tea or as a post workout snack!

Why I Love Having Plants & Flowers In My Room

I love having living plants and flowers in my bedroom. Yes, they look really pretty but there are actually so many more benefits to having real plants in your home than just for decoration.

Improves Mental Health
Even just glancing at a bunch of flowers makes me feel happier, perhaps it's because I associate them with whoever bought them for me or just because they're beautiful but science shows flowers are actually good for our mental health. Research has shown a link between indoor flowers or plants with wellbeing - they've been shown to reduce anxiety, fatigue and the scent of flowers can increase happiness levels. In addition to this, the bright colours of flowers have been shown to trigger receptors in our eyes and transmit feelings of calmness to the brain!

Mushroom & Red Pepper Quiche (Vegan & Gluten Free)

Quiche, a food that's normally not gluten free and certainly not vegan but that's about to change! Quiche was something I didn't used to have very often but when I did I really enjoyed it, so I set myself the challenge of creating a healthy, plant-based version and I've got to say...I'm pretty proud of how it turned out. Not only is it easy to make but it tastes so delicious, especially with lots of salad and a dollop of hummus! You can eat it warm straight from the oven of keep it in the fridge for a couple of days to eat cold.

The base of this quiche is made using chickpea flour (or gram flour), oat flour and flaxseed which creates a really simple yet delicious pastry that's entirely gluten free and full of plant-based goodness. Then the filling is made using grated courgette, tomatoes, red pepper, mushrooms and the seasonings which really do add so much to this quiche - basil, oregano, garlic, chilli flakes, salt & pepper! I also added soaked chia seeds which help to hold the ingredients together and give you an omega-3 boost which is essential for a healthy, happy body & mind!

Seasonal depression/seasonal affective disorder or S.A.D is type of depression that effects millions of people each year. It generally kicks in as Autumn/Winter appears, the hours of daylight decrease and the weather gets colder, and can last until Spring or event longer if you live in a country such as the UK!

I figured the season of pumpkins is the perfect time to talk to you about my love for pumpkin seeds, why I eat them every day and why I think you should too.

I put pumpkin seeds on everything from porridge to toast and smoothie bowls to salads - I've got quite the obsession with them, not just because they taste delicious and add such a yummy crunch to any dish but because they're absolutely loaded with essential nutrients.

Pumpkin seeds are really high in all important magnesium which has a wide range of health benefits to your precious body - including the creation of energy molecules, DNA synthesis and bone it's pretty vital!

Mocha Energy Balls

Coffee & chocolate - a match made in heaven! I've always loved that mocha taste and am obsessed with anything coffee flavoured. One of my favourite super quick & easy healthy sweet treats to make are energy balls, so why I hadn't thought of making mocha energy balls before is beyond me but now I've done it and they're SO delicious I just had to share the recipe with you all.

These mocha energy balls are little bites of heaven, they really don't taste at all healthy because they're so rich & chocolatey but they are in fact only made with natural, wholesome, unrefined ingredients that your body, mind and tastebuds will love!

I used a mixture of ground almonds and cashews which are so delicious combined together, flax for an omega boost, sticky medjool dates for natural sweetness, the all important ground coffee then coconut oil for adding goodness and to help hold everything together! Simples!

Pumpkin Spiced Cake With Orange Cashew Frosting

'Tis the season for all this pumpkin! October rolls around and everything is pumpkin flavoured or pumpkin scented, from porridge to candles and lattes to pancakes. I decided to jump on the pumpkin bandwagon this year and make some delicious pumpkin spiced cakes with a creamy orange cashew frosting! Gluten free, suitable for vegans and refined sugar free but the most amazing texture, mouth-wateringly tasty and full of flavour.

Pumpkin is an amazing food to eat all year round - it's bursting with vitamin A which is essential for your eye health and helps to maintain glowing skin and shiny hair. Pumpkin is also full of fibre, vitamin C and vitamin E! The pumpkin combined with baobab and orange in the cashew frosting makes these cakes true immune-boosting sweet-treats and they'll help to fight off any nasty colds that are lingering.

Broccoli & Cashew Stir Fry With Vita Coco

If you know me at all you'll know I'm a huge coconut oil lover, I use it every single day without fail! I add it to my coffee, stir it in porridge, cook with it, bake with it, use it as a moisturiser and even put it on my hair for a deep treatment, so when my favourite coconut oil company Vita Coco contacted me asking me to create a couple of delicious recipes for them I was delighted!

Vita Coco asked me to come up with two savoury recipes for them, one of which I shared on my blog a little while ago and one has been put on their website, Swear By It.

The broccoli & cashew stir fry pictured is one of my favourite meals - it's utterly delicious, super easy to make, full of flavour and contains all the goodness you need. It's high in vitamins & minerals, with health fats from the cashews and cold-pressed coconut oil and good carbs and protein too.

Sports drinks are often marketed as healthy or like they'll somehow aid your body in a positive way but actually they're not a good thing to be drinking, especially if you're goal is to get fitter, stronger & increase your overall health.

They're As Bad As Soda
You wouldn't drink coca-cola or pepsi max and think it was healthy, would you? Unfortunately sports drinks normally contain just as much sugar and nasty chemicals as soda....sometimes even more! The ingredients tend to be extremely artificial and won't do your body any good in the long term.

If you look into the manufactures of your favourite sports drink the likelihood is they also manufacture junk food products. E.g Powerade is made by the Coca-Cola company. You think the same company who purposefully targets poor countries with their cheap, rubbish filled drinks are interested in your health & wellbeing? Nah.

Cashew & Vanilla Protein Fudge

Fudge is one of those sweet treats that I've always loved; my mouth waters at the thought of it and I could easily eat a whole box of the good stuff! It's something I have really missed since going dairy free and embarking on a healthier lifestyle but no-more as I have created the most incredibly creamy, smooth, sweet & delicious fudge recipe that's 100% natural, refined sugar free, vegan and only contains 4 ingredients - you're welcome!

I used Nutristrength Vanilla Protein Powder  in this recipe which adds something really special - a yummy sweetness, that familiar vanilla flavour and a protein hit too! Nutristrength is one of my favourite brands for protein powders and this flavour just seemed perfect for the fudge recipe.

Roasted Mediterranean Vegetable and Cauliflower Rice

This roasted mediterranean vegetable and cauliflower rice dish is so simple but so amazing! It’s super quick, easy, inexpensive and most of all delicious. The cauliflower rice makes a great option if you want a light meal but you can substitute it for brown rice if you would like a heartier, more filling meal. 

These flavours and textures are truly mouth-watering! I love the fresh taste of thyme and basil mixed with zesty lemon and perfectly roasted vegetables. Every bite like heaven and I can just feel all the plant-based goodness nourishing my body. There’s loads of fibre from all the veggies to promote healthy digestion and a huge array of vitamins! Savoury Vegan Pancakes

Since getting more and more into plant-based eating I've loved experimenting in the kitchen to create dishes that normally wouldn't be gluten free, vegan and 100% natural to make them completely plant-based and just as delicious! I love playing around with ingredients and discovering what tasty food I can make! Today I bring you savoury vegan pancakes that are totally delicious, packed full of plant-power and are super satisfying too.

The pancake batter is made from a mixture of chickpea flour and buckwheat flour which are both naturally gluten free, easy on the digestive system and loaded with protein. I added flaxseed to help bind everything together and provide a boost of even more protein and omega-3, then I added grated courgette & carrot which give these savoury pancakes a great texture, wonderful veggie flavour and amazing vitamins and minerals. I'm all about the flavour so I chopped some fresh chives into the mixture along with crushed chilli flakes, paprika, dried herbs, zesty lemon juice and a generous amount of salt and pepper.

Zoats With Berries
Many people eat porridge or oatmeal for breakfast, it's a nutritious and delicious start to the day and will fuel you until lunchtime but have you tried zoats? Zoats are zucchini (courgette) oats...yeah, sounds weird but go with it, you make your oats on the stove as usual and add in grated courgette to the end. The courgette mixes into the porridge perfectly, adding extra volume and a potation of veg! I was wary of zoats but trust me, once the grated courgette is mixed in you can't taste it at all and now I really miss my zoats if I have no courgette in the house! Try topping your zoats with berries for extra fruity goodness.
