Why I Love Pumpkin Seeds

Happy Halloween!
I figured the season of pumpkins is the perfect time to talk to you about my love for pumpkin seeds, why I eat them every day and why I think you should too.

I put pumpkin seeds on everything from porridge to toast and smoothie bowls to salads - I've got quite the obsession with them, not just because they taste delicious and add such a yummy crunch to any dish but because they're absolutely loaded with essential nutrients.

Pumpkin seeds are really high in all important magnesium which has a wide range of health benefits to your precious body - including the creation of energy molecules, DNA synthesis and bone it's pretty vital!

Mocha Energy Balls

Coffee & chocolate - a match made in heaven! I've always loved that mocha taste and am obsessed with anything coffee flavoured. One of my favourite super quick & easy healthy sweet treats to make are energy balls, so why I hadn't thought of making mocha energy balls before is beyond me but now I've done it and they're SO delicious I just had to share the recipe with you all.

These mocha energy balls are little bites of heaven, they really don't taste at all healthy because they're so rich & chocolatey but they are in fact only made with natural, wholesome, unrefined ingredients that your body, mind and tastebuds will love!

I used a mixture of ground almonds and cashews which are so delicious combined together, flax for an omega boost, sticky medjool dates for natural sweetness, the all important ground coffee then coconut oil for adding goodness and to help hold everything together! Simples!

Pumpkin Spiced Cake With Orange Cashew Frosting

'Tis the season for all this pumpkin! October rolls around and everything is pumpkin flavoured or pumpkin scented, from porridge to candles and lattes to pancakes. I decided to jump on the pumpkin bandwagon this year and make some delicious pumpkin spiced cakes with a creamy orange cashew frosting! Gluten free, suitable for vegans and refined sugar free but the most amazing texture, mouth-wateringly tasty and full of flavour.

Pumpkin is an amazing food to eat all year round - it's bursting with vitamin A which is essential for your eye health and helps to maintain glowing skin and shiny hair. Pumpkin is also full of fibre, vitamin C and vitamin E! The pumpkin combined with baobab and orange in the cashew frosting makes these cakes true immune-boosting sweet-treats and they'll help to fight off any nasty colds that are lingering.

Broccoli & Cashew Stir Fry With Vita Coco

If you know me at all you'll know I'm a huge coconut oil lover, I use it every single day without fail! I add it to my coffee, stir it in porridge, cook with it, bake with it, use it as a moisturiser and even put it on my hair for a deep treatment, so when my favourite coconut oil company Vita Coco contacted me asking me to create a couple of delicious recipes for them I was delighted!

Vita Coco asked me to come up with two savoury recipes for them, one of which I shared on my blog a little while ago and one has been put on their website, Swear By It.

The broccoli & cashew stir fry pictured is one of my favourite meals - it's utterly delicious, super easy to make, full of flavour and contains all the goodness you need. It's high in vitamins & minerals, with health fats from the cashews and cold-pressed coconut oil and good carbs and protein too.

3 Reasons To Ditch The Sports Drinks

Sports drinks are often marketed as healthy or like they'll somehow aid your body in a positive way but actually they're not a good thing to be drinking, especially if you're goal is to get fitter, stronger & increase your overall health.

They're As Bad As Soda
You wouldn't drink coca-cola or pepsi max and think it was healthy, would you? Unfortunately sports drinks normally contain just as much sugar and nasty chemicals as soda....sometimes even more! The ingredients tend to be extremely artificial and won't do your body any good in the long term.

Coperate Ties To Junk Food
If you look into the manufactures of your favourite sports drink the likelihood is they also manufacture junk food products. E.g Powerade is made by the Coca-Cola company. You think the same company who purposefully targets poor countries with their cheap, rubbish filled drinks are interested in your health & wellbeing? Nah.

Cashew & Vanilla Protein Fudge

Fudge is one of those sweet treats that I've always loved; my mouth waters at the thought of it and I could easily eat a whole box of the good stuff! It's something I have really missed since going dairy free and embarking on a healthier lifestyle but no-more as I have created the most incredibly creamy, smooth, sweet & delicious fudge recipe that's 100% natural, refined sugar free, vegan and only contains 4 ingredients - you're welcome!

I used Nutristrength Vanilla Protein Powder  in this recipe which adds something really special - a yummy sweetness, that familiar vanilla flavour and a protein hit too! Nutristrength is one of my favourite brands for protein powders and this flavour just seemed perfect for the fudge recipe.

This unbeatable fudge recipe is made using cashew butter, coconut oil, Nutristrength vanilla protein powder and a little maple syrup - that's it! It couldn't be simpler, you just combine all the ingredients and let it set in the freezer for an hour or so then the result is the creamiest fudge that just melts in your mouth!

Roasted Mediterranean Vegetable and Cauliflower Rice

This roasted mediterranean vegetable and cauliflower rice dish is so simple but so amazing! It’s super quick, easy, inexpensive and most of all delicious. The cauliflower rice makes a great option if you want a light meal but you can substitute it for brown rice if you would like a heartier, more filling meal. 

These flavours and textures are truly mouth-watering! I love the fresh taste of thyme and basil mixed with zesty lemon and perfectly roasted vegetables. Every bite like heaven and I can just feel all the plant-based goodness nourishing my body. There’s loads of fibre from all the veggies to promote healthy digestion and a huge array of vitamins! Courgette and pepper provide you with vitamin C for a strong immune system and there’s lots of antioxidants in them too! Aubergine doesn’t just taste good and soak up all the flavours it’s cooked in but it also contains B&C vitamins, magnesium and manganese to promote a healthy body. How To Take More Steps Every Day

Many healthcare professionals recommend we should be aiming for 10,000 steps per day, which sounds like a lot doesn't it? Some people may exceed the 10,000 steps with no problem - especially if they have an active job or are on the go all day but those of us with office jobs or jobs that mean we're sedentary for long periods of time those 10,000 steps could be a little more tricky to reach.

Walking more is super important, so I've put together a list of 5 ways you can up how many steps you're taking every day really simply. If you try to incorporate this advice into your everyday life you'll be hitting that 10,000 number in no time!
