Ginger & Cinnamon Biscuits

Ginger and cinnamon are two of my favourite winter spices. I love the tastes individually but when they're combined something magic happens, it's just the most delicious and comforting flavour which totally screams 'Christmas'. I wanted to create a recipe which combined the two and came up with these delicious biscuits that are 100% gluten free, refined sugar free and vegan too.

These biscuits are made with a mixture of buckwheat flour and ground almonds, which compliment each other really well and bake brilliantly. They're sweetened with my favourite Date Nectar from Beloved Dates, held together with the help of flaxseed and spiced with cinnamon & ginger...mmmm!

Not only are these little biscuits totally scrumptious but they're healthy too! The ground almonds provide you with good protein and calcium, the coconut oil gives you some healthy fats, the flaxseed ups your omega-3 intake and cinnamon helps to balance out your blood sugar levels. So you don't even have to feel guilty about having a biscuit with your cup of tea!

Making these biscuits would be a really fun, festive activity to do with friends and family - you could make them into different shapes and even decorate them if you wanted! Whatever way you decide to make them I'm sure they'll turn out really yummy and they'll get you feeling super festive too!
