Savoury Vegan Pancakes

Since getting more and more into plant-based eating I've loved experimenting in the kitchen to create dishes that normally wouldn't be gluten free, vegan and 100% natural to make them completely plant-based and just as delicious! I love playing around with ingredients and discovering what tasty food I can make! Today I bring you savoury vegan pancakes that are totally delicious, packed full of plant-power and are super satisfying too.

The pancake batter is made from a mixture of chickpea flour and buckwheat flour which are both naturally gluten free, easy on the digestive system and loaded with protein. I added flaxseed to help bind everything together and provide a boost of even more protein and omega-3, then I added grated courgette & carrot which give these savoury pancakes a great texture, wonderful veggie flavour and amazing vitamins and minerals. I'm all about the flavour so I chopped some fresh chives into the mixture along with crushed chilli flakes, paprika, dried herbs, zesty lemon juice and a generous amount of salt and pepper.
I love how simple these ingredients are but combined they make something so tasty and wonderful! A real crowd-pleasing meal these pancakes would be amazing served for lunch with salad or dinner with sweet potato wedges.
