Quinoa Stuffed Butternut Squash

Butternut squash is one of my favourite winter vegetables and I love incorporating it into dishes such as curries, salads and even making butternut squash wedges but I recently I cooked butternut squash in a new way and it turned out so wonderfully I felt obliged to share it with all of you!

This recipe for baked butternut squash stuffed with quinoa and veggies is an amazing one if you're craving something satisfying, filling, nourishing, comforting and full of flavour. It's surprisingly easy to make, doesn't require any fancy or hard to source ingredients and most importantly it tastes yummy!

Butternut squash has the most amazing natural flavour that means you only need a little olive oil, dried herbs, salt & pepper to make it something truly special! When baked in the oven it becomes beautifully tender, sweet and mouth-wateringly moreish. I then stuffed the roasted squash with simple yet flavoursome quinoa, courgette, onion and tomato all seasoned with lemon juice, coriander, paprika, salt and pepper. See....super simple but super tasty!

Butternut squash doesn't just taste good, it's loaded with goodness! It's packed full of immune-boosting vitamin A and C, contains healthy fibre and is also a good source of vitamin B6, B2 and K. Butternut squash is high in anti-oxidants and has anti-inflammatory benefits - always a good thing! So, eating this seasonal vegetable alongside the protein packed quinoa will really give your body a boost and leave you feeling energised, nourished and ready to conquer the world.
