Pesto & Vegetable Rice Dish

Summer is starting to make an appearance which is getting me so ready for all the light, fresh summer dinners! While I love a spicy curry and a substantial stew there's nothing quite like summer dinners. I'm talking potato salads, homemade veggie burgers with lightly spiced potato wedges, pasta salads and so much more.

My favourite thing though is definitely pesto! I've always loved pesto pasta so much and since becoming more experimental with my cooking I've starting incorporating homemade pesto into more this wholesome & scrumptious pesto & vegetable wholegrain rice dish. It's everything you could ask for in a spring/summer meal - it's fresh, it's filling, it's flavoursome and it's SO delicious.

Making your own pesto might sound like a lot of faff but really it couldn't be simpler. It's just a case of blending together a few ingredients that can all be found in your local shop! It tastes just incredible too - far better than any of that shop bought stuff and cheaper too.
I love to make a big batch of my pesto to keep in the fridge and add to dishes like pasta (of course) but also salads, boiled new potatoes, quinoa, roasted vegetables and meals like this rice & veg recipe too. It just goes so beautifully with so many different combinations...a true staple!

In this recipe I've mixed the yummy pesto with wholegrain rice, tenderstem broccoli, juicy cherry tomatoes and wilted spinach. So simple but so perfect!
This dish isn't just tasty but it's packed full of goodness too, to help you feel your healthiest and your happiest. There's healthy fats from the olive oil and the pine nuts to contribute to a healthy heart, shiny hair, glowing skin and brain health, there's energising carbs from the wholegrain rice which will give you a lovely slow release of energy (perfect for lunch time) and of course there's a mass of nutrients too such as vitamin C, vitamin K, iron, vitamin C, fibre and anti oxidants. The whole meal is a winner and I'm obsessed! I hope you love it as much as I do.

Pesto & Vegetable Rice Dish

Rice Dish
  •  160g rice
  • 120g tenderstem broccoli
  • 300g cherry tomatoes
  • 100g spinach
  • 100g pine nuts
  • 60g fresh basil
  • 1 clove garlic
  • 100ml olive oil
  • 4 tbsp lemon juice
  • pinch of salt


How to cook Pesto & Vegetable Rice Dish

  1. Gently fry the pine nuts in a dry pan over a medium heat for a few minutes until slightly golden.
  2. Allow the pine nuts to cool then add them to a food processor along with all the remaining pesto ingredients.
  3. Blend well and put to one side.
Rice Dish
  1. Bring a saucepan of water to the boil then add the rice and cook according to packet instructions. 
  2. When the rice is 10 minutes away from being cooked it's time to cook the veg! Add 1 tbsp olive oil to a frying pan then chop the broccoli and add to the pan.
  3. Stir fry for 6-8 minutes then add the halved cherry tomatoes. Cook for a further minute or two then add the spinach and allow to wilt.
  4. Mix the drained rice in with the veggies and 2 tbsp of the freshly made pesto.
  5. Serve and enjoy!
